Step-by-Step Instructions

  1. Step 1

    Cook a wide egg layer

    Beat the eggs until no separate streaks remain. Heat 1 teaspoon cooking oil in a 10-inch nonstick skillet over medium-low heat, pour in the eggs, and tilt the pan to form one wide, even layer. Cook until the surface has no flowing egg but remains flexible enough to fold, then remove the skillet from the heat and leave the egg layer in place.

    Cook and season the Buldak noodles

    Boil the Buldak noodles according to the package directions. Drain them very thoroughly, return them to the pot, and mix in the spicy sauce packet until evenly coated. Buldak sauce is very spicy, so heat-sensitive cooks can start with half of the packet and add more to taste.

  3. Step 3

    Mix the creamy sweet-spicy sauce

    In a small bowl, stir together the mayonnaise, Sriracha, and honey until smooth. Keep this sauce for the inside of the omelette rather than drizzling it over the finished egg.

    Grill the sausage

    Heat a small skillet over medium heat. Add the sausage and cook for 2 to 3 minutes until hot and lightly browned, adding the remaining cooking oil only if the pan looks dry. Transfer the sausage to a plate.

    If using mozzarella, place it in the same small nonstick skillet over low heat and melt it gently into a soft layer for 30 to 60 seconds. If using cheddar instead, skip this step and add the slice or shredded cheese directly to the filling later. Skip this step completely when making the omelette without cheese.

    Layer the filling

    Return the egg skillet to low heat. Arrange the filling compactly down the center or over one half of the egg, leaving a wide border, in this order: cooked Buldak noodles, creamy sweet-spicy sauce, grilled sausage, then optional cheese. Add the softly melted mozzarella or place the cheddar directly on top. Do not pile the filling so high that the egg cannot close around it.

  7. Step 7

    Enclose the filling

    Use a wide spatula to lift the egg edges over the filling and fully enclose the noodles, sauce, sausage, and optional cheese inside one long stuffed omelette. Do not leave the omelette open and do not roll it into multiple thin layers.

  8. Step 8

    Cut and serve

    Slide the finished omelette onto the plate, cut it once through the center into exactly two large pieces, then slightly separate and angle one half so the freshly cut interior faces the camera. Keep all creamy sauce inside the filling and add nothing on top.

Storage

Buldak Omelette is best eaten immediately. If necessary, refrigerate leftovers within 2 hours, use them within 1 day, and reheat until the egg and noodle filling are steaming hot throughout.
